The Risen Christ, Our Hope
As I was thinking about Easter and this time we have to remember Christ, crucified and buried, yet alive today I was reminded of these verses-
"......And if Christ is not risen, your faith is futile; you are still in your sins! If in this life only we have hope in Christ, we are of all men the most pitiable. but now, Christ is risen from the dead!......" 1 Corinthians 15:17-20
We do have hope. There is a hope and future for all who believe in Christ and the fact that he did die for our sins, was dead and buried and is now alive!
"Blessed be the God and Father of our Lord Jesus Christ, who according to His abundant mercy has begotton us again to a living hope through the resurrection of Jesus Christ from the dead to an inheritance, incorruptible and undefiled and that does not fade away, reserved in heaven for you." 1Peter 1:3-4
I am so thankful for the precious gift of salvation and ability to believe and have this hope.
I have been listening this week to John MacArthur's current series, which is as usual, excellent - if you have some free time this is a wonderful perspective on Easter

Baked Oatmeal
Here's our new favorite breakfast dish - it is so yummy and I don't even like oatmeal :-)
You can make this the night before and stick it in the refrigerator till morning. And leftovers warm nicely in the microwave the next day.
Here's the original recipe:

Baked Oatmeal
1 cup oil (can substitute butter or applesauce)
1 1/2 cups sugar (can reduce)
4 eggs
6 cups oats
4 tsp baking powder
1 tsp salt
1 tsp cinnamon
2 cups milk

Combine all ingredients in order listed. Pour into greased 9x13" pan. Bake at 375 for 30-40 minutes until lightly browned. Can refrigerate overnight before baking. Serve topped with butter, brown sugar and milk.

And here's how I have been making it, I have been making 1/2 a recipe at a time:
Baked Oatmeal

I meant to take a picture of the finished product this morning but I forgot and now it's all gone! So, here's a picture of Caeden playing with his new barrel of monkeys!

1/2 tsp cinnamon
1 cup milk
Combine all ingredients (I usually do dry first and then wet so I can dirty the least amount of dishes!). Mix well and pour into a 8" square baking dish. I often drizzle molasses over the top before baking. Bake 375 for 30 minutes. Serve warm. You can drizzle more molasses over the top before serving.

Colm is quite the crawling machine these days!
Caeden - please note his white tee-shirt - this has become the only acceptable shirt to wear lately since daddy usually wears a white tee shirt to work in, Caeden has followed suit.
Caeden sleeping on the living room floor the day he was sick last week - he got up at 4:30 and crashed watching a movie around 6:30.
